Anyone can put together a good 3-course menu for as little as £3 by using ingredients that are cheap because they’re in season or require a longer cooking time. Dishes featuring these ingredients are often also the tastiest (see our ‘Best of British’ selection if you’re stuck for ideas).

 

Sell your menu for £5.95 and after VAT at 17.5% you’ll make a gross profit of £2.06 per head. Chickenfeed! you might think, and for half a dozen covers you’d be right. But sell 100 lunchtime specials every week throughout the year and provided you get your costings right you could increase your annual gross profit by almost £11,000, a respectable contribution towards overheads.  

 

 

 

 

3-course meals for £5.95?  If you think it’s not worth opening up for then think again. Many of the most popular traditional dishes are amongst the cheapest and easiest  to prepare. Provided  they’re costed right and served in sufficient numbers, modestly-priced menus can make an important contribution to profits.

To local businesses - distribute flyers featuring a selection of your lunchtime specials to every business in your catchment area. Join your local Chamber of Commerce and promote your venue personally. Put up posters visible inside your restaurant and in the window

 

To pensioners - contact local clubs & societies, community centres, churches. Do a leaflet drop in residential areas populated by pensioners. See our Grey Matters feature.

 

To students - posters in local colleges & universities, flyers on their notice-boards and a leaflet drop in areas predominantly inhabited by students
