Offer - For a set price at lunch time, offer a small menu of tasting plates. Include samples of starters, pasta, mains and desserts plus  table water, bread and perhaps a drink of choice and even a coffee at the end.

 

Objective To show the customer what you can do and impress them so much that they’ll want to come back for a full meal

 

Keep portions small and serve on small plates or bowls. The food will present better and remove the temptation to serve more than a taster portion. Make the price attractive – around £7.95 per person. This will enable customers to try out your food without spending too much and will encourage them to return at a later date. It’s a real winner amongst holiday-makers who like to research places to eat. If you treat them well, they’ll put you at the top of their ‘places to return’ list and come back for a full evening meal later in their holiday.  

 

Make sure you show them your normal menu and mention any particular dishes that you’re known for. Customers are usually more receptive to this before they’ve eaten so between taking their order and serving the first course is a good time

 

As well as showing off your best dishes, this is a great opportunity to shine with good service and given that these customers are likely to be strangers in town, a warm welcome is especially important.

 

 

 

Instead of discounting, try this idea. Great for any restaurant but especially

effective if you’re in a tourist area and face competition from other restaurants
