It’s as simple as putting on one member of floor staff and a limited food offer then using ingredients from your regular menu at reduced prices. The offer will depend on your area. These days with many people starting and finishing work at odd hours, afternoon meals are becoming increasingly popular especially when offered as early bird specials before 6pm, for example.

 

On the left,  we’ve put together a small menu that could be available outside mealtimes.  It includes a fish, meat and vegetarian option, can be mostly prepped in advance and served quickly and uses low-cost ingredients to give  a good margin.

 

Alternatively, adapting your menu to snack form could prove a hit with tired shoppers and might also encourage casual passers-by to pop in for a drink and a nibble. This is an ideal marketing opportunity to show off your restaurant and promote your full menu, highlighting any coming specials or events. So make sure your staff member is enthusiastic and well-briefed.

 

Even if things are quiet in the beginning, there’ll be plenty of other things to do front of house in the afternoon - answering the phone, folding napkins, cleaning windows, polishing glasses, laying tables.......
